Granola is a pantry staple in my kitchen. It makes for a quick and healthy breakfast or snack and goes great on yogurt, with some fruit or soaked in milk.
This granola recipe is super easy to make. You mix oats with some form of fat, liquid sweetener and a pinch of salt. You can also spice it up with some cinnamon, chocolate chips, nuts, or dried fruit. It is also the perfect place to add discard.
The discard give some extra binding power, which creates those large, chunky pieces. It doesn’t make the granola sour or weird so don’t worry about that. If you don’t know what discard is, you can read my post on starters to learn more.
Sourdough Granola
Ingredients
- 195 grams Oats Quick Cooking or Steel Cut
- 40 grams Coconut oil Neutral oil works too
- 50 grams Discard
- 50 grams Honey
- ½ tsp Salts
Instructions
- Combine oats, oil, honey, discard and salt.
- Mix until combined and all the oats are coated.
- Bake at 350°F for 20-25 minutes until the top is golden brown.
- Let cool for at least 15 minutes so it has a chance to harden.
- Using the back of a wooden spoon or your hands, break granola into desired size.

I hope you enjoy this recipe and give it a try. It is also super easy to scale up and down. Once it has fully cooled, you can store it in an airtight container for up to two weeks in the pantry. They really maintain their crunch and is great to have around.
