Quick and Simple Sourdough Bread Crumb Recipe

Have you left your bread in the the fridge for so long that it has basically turned into a crouton? This often happens to me, especially the ends of my bread. That little rounded bit at the end always seems to get left behind. It’s too thick to fit in the toaster and too small that no one wants to eat it.

In my post about sourdough, I talked about sourdough bread storage techniques. If you follow these tips, you can make your sourdough last up to two month. But, we all run into those times where a piece of bread just goes stale in the back of fridge.

Instead of throwing that piece out, I like to cut it up into large cube and freeze it in a large freezer bag. Slowly, I will build up a collection of these frozen, slate bread cubes. They are perfect for making stuffings or bread pudding. Another way to use up this stale bread is to make breadcrumbs. Bread crumbs are a nice thing to have in the pantry. They are super versatile and customizable. You can make plain bread crumbs or spice it up with some herbs and spices.

Making bread crumbs is not an exact science. It is more about the method than the exact quantities. You can really use any amount of bread and add any amount of seasoning. If you are using two whole loaves of stale bread, maybe spread them out on two sheet pans. If you’ve only got half a loaf, then one sheet pan is enough. This method also works for any type of bread, not just sourdough.

Ingredients
  

  • Stale sourdough bread Any amount

Instructions
 

  • Make sure bread is at room temperature (is using frozen).
  • Preheat oven to 350°F.
  • If your bread isn't dried, place it in the oven for 5-7 minutes until dried out.
  • Pulsed dried bread in food processer until desired fineness. Add any dried herbs or seasoning here.
  • Spread crumbs on sheet pan and bake for 8-10 minutes, stiring after 5 minutes, until golden brown.

Notes

Store breadcrumbs in air tight container for up to a week at room temperature. 
To freeze, place bread crumbs in freezer bag for up to 2 months.
