Soft and Chewy Butter Cookies (Secret Ingredient)

Cookies are one of my favourite treats to make. They are super quick to mix up and bake in about 10 minutes.

Once a solid base dough and technique is established, it is really easy to make different versions. You can switch between brown and granulated sugar, swamp butterscotch chips for chocolate chips or add in different extracts and inclusions

These cookies have a super buttery flavour, without feeling too overwhelmingly fatty. This is because of the lemon juice. Lemon juice is frequently added to pastry dough to tenderize it. Now, the cookies don’t taste lemon-y at all but it helps create a perfectly soft yet chewy texture.

As you can see in the picture, these cookies are on the thinner side. I think this is the perfect thickness for a chewy cookie. Anything thicker would be too cake and anything thinner would be too crispy.

Ingredients
  

  • ½ cup Butter Unsalted
  • 1 cup Sugar
  • 1 tsp Vanilla Extract
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 1 Egg
  • 1 Tbsp Honey
  • ½ Lemon Juiced
  • 2 cup Flour

Instructions
 

  • Cream butter and sugar.
  • Add vanilla, baking soda, baking powder, salt, honey and lemon juice.
  • Mix until incorporated.
  • Add egg and mix. It will have a curdled appearance.
  • Add flour and mix until incorporated.
  • Add 1-2 Tbsp sized ball to a baking sheet and bake at 350°F for 8-12 minutes until the edges are slightly golden brown.
  • Let cool for 10 minutes on the baking sheet and transfer to a cooling rack.
  • Let cool completely and enjoy.
