5 Ingredient Sourdough Discard Peanut Butter Cookies

These sourdough discard peanut butter cookies are a take on a flourless peanut butter cookie. They are thin and chewy with a beautiful crackly top. Not to mention, they only require 5 ingredients (well 8 if you count the baking soda, powder and vanilla). They are super easy and quick to whip up and do not require any chilling or rest time.

Technically there is flour in this recipe from the starter, but there is no additional flour. This means they are not gluten free, but, according to a 2019 paper, sourdough is considered a low FODMAP food and is potentially suitable for people with gluten intolerances(but of course you should consult a doctor first)*.

The peanut butter and sugars give a super flat cookie, while the brown sugar give a chewy texture. The egg is there to bind everything together into a homogenous mixture. These cookies have a nice balanced flavour. They do not have an overwhelming peanut butter flavour but are not super sweet since they are balanced with the savoury peanuts.

These are the perfect cookie for beginner bakers to make. All you need to do is combine the ingredients with a spatula, scoop the dough onto a baking tray and bake. The only thing is you need to make sure the cookies are about 2 inches apart as they spread out quite a bit. Once the cookies are baking, let them cool on the baking tray for about 5 minutes and they are done! Let them cool completely on a baking rack or eat warm.

Ingredients
  

  • 90 grams Granulated Sugar
  • 110 grams Brown Sugar
  • 200 grams Peanut Butter
  • 100 grams Sourdough Discard
  • 1 Egg
  • ½ tsp Vanilla Extract
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder

Instructions
 

  • In a bowl, mix all ingredients until combined.
  • Using a small cookie scoop (or whatever size you desire), scoop cookies onto a parchemnt lined baking tray. Leaver about 2 inches between each cookie as they will spread and flatten.
  • Bake at 350°F for 10 minutes.
  • Lets cookies cool on cookie tray for at least 5 minutes and trasfer to cooling rack. Let cool and enjoy!
